HA'APAI, TONGA - APRIL 08: The Sauaki family prepares to cook their Sunday meal in an 'umu (underground oven) April 08, 2007 on the island of Felemea, in the Ha'apai island group of Tonga. The Sunday meal after church is the most important meal of the week for Tongans. Men and women of the family each have a distinct task in preparation for cooking in the 'umu. Men cut and shred the coconut and women wrap the fish and other meats in taro leaves. It is said that if you don't have a little smoke going on Sunday morning from the 'umu you will not be having a good meal. Tonga is one of the last surviving monarchies in the Pacific islands, however there has been a recent push towards democratic reform, challenging the people of Tonga to maintain their cultural heritage while conforming to modern day capitalism.
